Pumpkin Cheesecake Bars
*Adapted from Food.com’s Easter Sunday Cheesecake recipe
Ingredients:
1/2 cup butter, melted
1/3 cup sugar
1 1/2 cup Effie’s Oatcakes, ground in blender or food processor
3 8oz. packages Smithfield Cream Cheese, softened
3/4 cup sugar
1 tsp. vanilla
1/s tsp. lemon juice
Your favorite brand (or homemade) Pumpkin Butter
Instructions:
- Make the crust by mixing together melted butter, sugar, and Effie’s Oatcake crumbs
- Press the crust mixture into the bottom of a 9×13” pan, covering evenly
- Bake at 350 degrees Fahrenheit for 8 minutes, leave the oven on
- While crust is baking, make the filling – beat cream cheese, eggs, sugar, vanilla and lemon juice on high until whipped
- After the baked crust has cooled, pour the cream cheese mixture over top, spreading evenly to cover
- Bake at 350 degrees Fahrenheit for 30 minutes
- Cool cheesecake completely and chill in the refrigerator overnight
- When ready to serve, cover with a layer of pumpkin butter to the desired thickness
