Pumpkin Cheesecake Bars

*Adapted from Food.com’s Easter Sunday Cheesecake recipe

Ingredients: 

1/2 cup butter, melted

1/3 cup sugar

1 1/2 cup Effie’s Oatcakes, ground in blender or food processor

3 8oz. packages Smithfield Cream Cheese, softened

3/4 cup sugar

1 tsp. vanilla

1/s tsp. lemon juice

Your favorite brand (or homemade) Pumpkin Butter

Instructions: 
  1. Make the crust by mixing together melted butter, sugar, and Effie’s Oatcake crumbs
  2. Press the crust mixture into the bottom of a 9×13” pan, covering evenly
  3. Bake at 350 degrees Fahrenheit for 8 minutes, leave the oven on
  4. While crust is baking, make the filling – beat cream cheese, eggs, sugar, vanilla and lemon juice on high until whipped
  5. After the baked crust has cooled, pour the cream cheese mixture over top, spreading evenly to cover
  6. Bake at 350 degrees Fahrenheit for 30 minutes
  7. Cool cheesecake completely and chill in the refrigerator overnight
  8. When ready to serve, cover with a layer of pumpkin butter to the desired thickness
